Welcome to Mama Gina Catering, an Authentic Italian Food Experience. All my menu items include the most amazing Italian flavors taught to me by my Nana from when I was a little girl. My grandparents, born & raised in Italy came to this country by way of Ellis Island. I loved listening to the stories they told with their Italian friends most of which spoke broken English. All of my teachings were hands on not hand written “little of this & little of that" then tasting until you are happy. To this day that is how I cook because Italian Food is all about fresh ingredients, heart, taste and a deep love of cooking.

Husband and wife team Jason and Carolyn Roy opened the original Biscuit Head restaurant in Asheville, North Carolina, to share their love of southern cooking, their inspiration from travel, and their commitment to local foods. The restaurant has been packed since day one and widely featured in the media including Bon Appetit, The New York Times, Food & Wine, USA Today, Garden & Gun, Paste and Eater.com. Spanning the Asheville and Greenville (SC) areas since 2013, all Biscuit Head locations strive to have as light of a carbon footprint as possible and participate in local charitable events.

It is believed that the Spanish, upon landing in the Caribbean, used the word “barbacoa” to refer to the technique the natives used slow cooking when preparing proteins over a wooden platform. This culinary technique was well established in the US, primarily in the South, where pig meat was broadly consumed. Fire, smoke, rubs and sauces make BBQ special and particular to the region where it comes from. Mikasa uses many spices and peppers from Peru to give it a special and delicious taste!
