HOW IT ALL BEGAN As a child the best times were our Family Gatherings. Every weekend we would meet at one of our relative’s house where Our Family would meet for huge dinners and all types of special occasions. Ever since I've been recreating that atmosphere. My first jobs were working at a bakery, restaurant, catering company and butcher shop. In 1982 I started my business AAA Royal Catering. A native of Trinidad and Tobago, Nikisha Williams found her calling to cuisine at a very young age. In the Caribbean, it was commonplace to share large meals with family and friends made from ingredients picked outside your door and seasonal harvest feasts were shared with the entire community. Nikisha learned quickly that good, nourishing food was a blessing meant to be celebrated and she developed a passion for celebrating it.
