Chubasco Tacos is part of Behind! Hospitality, led by a team that loves bringing people together around great food. Tacos are our specialty, but our experience reaches beyond them, we also created the menu for Dahlia Tapas, Tequila & Wine. We enjoy working directly with couples to create wedding menus that feel fun, personal, and right for the occasion.

We offer more than a standard catering package. Couples can build their menu around a full taco spread, Spanish-inspired tapas, or a combination of both. Our experience developing the menu for Dahlia Tapas, Tequila & Wine gives us the creativity and flexibility to shape each menu around the couple, their guests, and the kind of celebration they’re planning.

An elevated take on their menu
We came to Chubasco with a pretty unusual request: take the flavors people already loved from their taco menu and reinterpret them for our elevated Spanish-Mexican setting. They were genuinely excited by the challenge, and that creativity showed in every dish. The potato tacos were the moment that sold us. Chubasco transformed them into beautifully presented potato croquettes that still carried the flavor and comfort of the original taco. Seeing something so familiar become something completely new and so perfectly suited to our theme and dining format, was absolutely mind-blowing. Nothing felt copied and pasted from a standard catering menu. Each dish was thoughtfully adapted to our atmosphere, our guests, and the experience we wanted to create. Chubasco brought personality, imagination, and incredible food to the table. We’re still amazed by what they were able to create for us.

Hands down some of the best
I’ve hired caterers before, and Chubasco was by far the easiest experience we’ve had. The food was outstanding, but what really stood out was how organized everything was. There was no guessing, no last-minute surprises, and no stress. The asada and birria disappeared almost immediately, and several guests asked for their information before the event was even over. It honestly felt like having someone on our team instead of just another vendor. It’s rare to find a business that delivers exactly what they promise, but Chubasco exceeded our expectations. Highly recommend.
