We also source locally, including herbs, meats, and cheeses. Our personal pizzas are made to order and freshly baked in our Italian made wood-fired pizza oven. Catering By Tracy was formed in 2007 in Charlotte, NC and exploded when we moved to Lake Norman in 2011. Weddings are our top catering event, along with corporate business, vacation rentals, birthdays, all events you are needing food for. We cook for 12 and go up to 500 Guests?? We have commercial cookers that allow us to cook 20 pork butts, 40 whole chickens, 25 beef butts, 30 racks of ribs, 200 chicken wings All At Once!!!!!!!! We know how to Cook For An Army!!! Throughout my career, I've worked in various restaurants across New Jersey, New York City, Florida, North Carolina, and California. With this exposure, I've learned many different styles, cuisines, and techniques of cooking, and from many executive head chefs. Managing and handling all facets of the kitchen, is also my expertise. Graduating from one of the top Culinary Arts Schools in the United States, I earned my A.A.S Degree in Culinary Arts, and Serv Safe/State Food Safety Certificate.

Welcome to Mama Gina Catering, an Authentic Italian Food Experience. All my menu items include the most amazing Italian flavors taught to me by my Nana from when I was a little girl. My grandparents, born & raised in Italy came to this country by way of Ellis Island. I loved listening to the stories they told with their Italian friends most of which spoke broken English. All of my teachings were hands on not hand written “little of this & little of that" then tasting until you are happy. To this day that is how I cook because Italian Food is all about fresh ingredients, heart, taste and a deep love of cooking.
