Upon graduating, we trekked across the country to work tireless hours under envelope-pushing chefs in Napa Valley and San Francisco. I had my first shot at managing a sushi restaurant when I took over an empty section of the family restaurant and introduced sushi to my customers. It was a challenge that I will never regret accepting. It was fun, a lot of fun! I had the opportunity to work with some really talented and creative chefs. Antonio Ayestaran has been a professional chef for over 30 years. He is an A.C.F. Apprentice graduate, a certified Chef de Cuisine, and a certified Pastry Chef. Antonio, along with six other chefs, represented California at the largest cooking competition in the world, the Culinary Olympics in Germany. I’m Amy. My passion for baking started when I was in high school. In my senior year, I went to a technical high school that focused on culinary arts, baking, and hospitality. After learning everything about the industry and how far you could go with passion and practice my inspiration for baking continued to grow over the years.
