NOVEM was born out of the union of our marriage. Novem is Latin for November. The month that my wife & I started dating & got married in. My wife is my anchor . She gave me the confidence to start my own dreams instead of making someone else’s . I’ve catered & made dough for many celebrities , artists , & athletes such as the back to back champions the LA Dodgers. Seeing those reactions of how good my dough is propelled us to get into the business our selves & share our passion with you & your loved ones.

NOVEM is contemporary artisan pizza built on patience, precision, and obsession over the small details. I partner with local Italian butchers , local farmers market , & imported flours . This is a slow fermented dough - intentional flour blends, Airy crust that eats light but has structure. A bite that makes you pause for a second. The foundation is everything. I work with high-quality flours and controlled fermentation to create a dough that’s alive — one that develops flavor naturally instead of being forced. It’s contemporary in style, but rooted in respect for traditional methods. High hydration. Balanced chew. Open crumb.

    We had Novem come out for a backyard party and it was hands down the best decision we made. The whole setup felt cool and effortless, and the smell of the oven going instantly set the vibe. The pizza was insane. The crust was super airy and light but still crispy. You could tell the dough was made with care. It had that slight chew and flavor that doesn’t taste rushed. Even the simple pies tasted elevated. Our friends kept hovering near the oven waiting for the next one to come out. By the end of the night everyone was asking for their info. It felt fun, relaxed, and honestly way better than traditional catering. Would 100% book again.

    We hired Novem for a private event and honestly… the pizza stole the show. You can taste the difference immediately. The dough was light, airy, and perfectly crisp on the outside without being dry. Every slice had that balance of chew and crunch that you usually only get from legit artisan spots. The flavors were simple but elevated. Nothing felt heavy or greasy. Our guests kept going back for seconds (and thirds). Multiple people asked who made the pizza and where they could find them again. Not only was the food incredible, but the setup was smooth and professional. You can tell there’s real passion behind what they do. Highly recommend if you want something that feels high-end but still warm and approachable.
