“Blue Line Catering, Chef Michael & his team, did such an incredible job for our rehersal dinner and wedding day! I had a very specific vision for what I wanted the wedding day food to be and what I wanted presentation to look like as well, and they exceeded our expectations. My husband and I are big foodies and our dinner was such an important part of our wedding day to us. We wanted it to be uniquely ours. We wanted a dinner that wasn’t something you could find anywhere but one that reflected our personalities and favorite foods. Chef Michael personally worked with us to create a one of a kind menu and it was the best experience. He made it fun, easy, exciting, detailed, creative, and was so intentional about every aspect. He went above and beyond for us to ensure everything was exactly what we were envisioning, at times it was like he was reading my mind! We created a menu full of heavy hors d’oeuvres, that not only tasted amazing, but looked even better. Some of our favorites were the ahi tuna crisps with a sweet pineapple soy drizzle, Petite beef sirloin crostinis with a bright chimichurri, Mini shrimp po boy sliders with a creamy firecracker remolaude, and the carribbean chicken empanadas with a mango salsa were raved about by all of our guests. The quality of ingredients, the combinations of flavors, the thought and integrity behind each dish was flawless. Chef Michael and his team also catered our rehersal dinner as well and it was so special. I am the biggest parmesean cheese lover, and knowing this Chef Michael came up with the idea to have fresh pasta served out of parmesean wheel for a one of a kind experience! He also went out of his way to create a special dinner for the groom (because I don’t eat red meat), that meant the absolute world to us. The service was also phenomenal, and talked about by all of us guests during the rehersal dinner and wedding day. Service is so important because even if the food taste good if the service is bad it can turn your experience bad, and the service they provided definitely did not, it elevated the entire experience! Wedding planning can be stressful but Chef Michael and his team made it not only stress free but so enjoyable! I would absolutely reccomend Blue Line Catering to everyone, not just brides, because they truely can do it ALL!”
