    Our wedding had a Caribbean/ Island theme, and a guest list of 367. We shopped and shopped for a caterer, that could provide the service and foods that we wanted, and handle a crowd this large. A co worker had mentioned they used this caterer for a her husbands company yearly function of 600 and was super pleased with everything, so I gave them a call, and I am so pleased we did. Brandon, and their amazing staff, handled it all from bar service with a complete raw bar, that had a chefs shucking fresh oysters, shrimp cocktail shooters, and cocktail crab claws, with warm section of pineapple chicken skewers, bacon wrapped scallops, steak bites. From bar service they smoothly transitioned our guests into a banquet that dreams are made of. We had a steamship round (prime rib) cooked perfectly , spiral honey ham, whole jerk roasted chickens, and a beautiful whole mahi with crab stuffing, that 3 wonderful chefs carved and generously served. The salads, the fresh baked breads had a caribbean flair as well with the most amazing coconut pineapple bread, and sides were served buffet style. The chaffing dishes were continuously refilled, and how smoothly they handled the service for the reception was top notch. The tables were cleared quickly so guests did not have dirty plates lingering in there way. They even had a food truck preparing the food behind the venue keeping everything fresh and hot. Polo and assistants personally served our amazing cake even though our cake was bought from another source. Brandon was on top of every aspect of the food and service for our reception.
