My youngest daughter, was diagnosed with an Auto-Immune Disease, called Eosinophilic Esophagitis (EoE) just after her 1st Birthday. Prior to the diagnosis she suffered from constant vomiting. Through endoscopies and food elimination we determined that she could not eat anything that contained Gluten, Dairy, Eggs and a few Fruits and Vegetables. Since her diagnosis, I began to develop recipes that would not only taste good but, look good too. Most Allergen Free recipes that I found contained other ingredients that she could not eat and if she could, she didn’t like the consistency. So once it came to her 2nd Birthday I was going to be ready!

Laura Curtis, a Culinary Institute of America grad, was working as a R&D chef when she made her first batch of bright pink, tart & fruity Raspberry Hibiscus marshmallows. Her husband suggested she name the new amply fluffy creations Malvi, short for malvavisco, the Spanish word for marshmallow. She created Malvi Mallows using European-Style butter and Fair-Trade chocolate to make Malvi cookies extra rich, and dried hibiscus flowers, locally roasted espresso, whole vanilla bean, and organic Georgia peanuts to maximize marshmallow flavors, then built a business so that everyone can party s'more.
