Most restaurants/bars in Playa del Carmen are used to serving Gringos and the food is completely safe. However, if you're going off the beaten path, I would make sure the food is fully cooked (no fresh lettuce for example as it could have been washed with tap water). ALWAYS drink bottled water when in Mexico, including when you're brushing your teeth (if they're serving you at a hotel/restaurant, it's likely from purified water but it doesn't hurt to check!) The ice in drinks is from purified water.
You can walk most places in Playa del Carmen. If you want to go on an excursion, the tour guides will pick you up at your hotel or at a nearby point. If you want to take. cab, you can hail one in the street. Many cab drivers speak English, but not all - but they should know most hotel names/locations and attractions so. you just have to say that. Or join one of our several Spanish speakers coming to the wedding! We are providing transportation to and from the wedding venue.
Yes, most U.S. carriers have free text and calling in Mexico for unlimited plans so nothing should change, but check with your carrier and plan. For Europeans and other countries, you will probably have to pay or just use WiFi.
