Erin and Zak’s story began with a job interview—though most of Zak's team loved her immediately; it took a second interview at a local coffee shop for Erin to win over the final holdout - Zak. Ironically, he wasn't her biggest fan at first (a stance he insists was purely professional). Erin got the job, and instantly sparks began to fly between the two. A few weeks later, Zak seized an opportunity after the office holiday party, convincing Erin to join him for a day of brewery hopping around Minneapolis. Erin reluctantly agreed, and they ended up at Moto-i, the restaurant he introduced her to- and remains one of their favorites. Zak was smitten from the start, asking Erin to be his girlfriend not once, not twice, but three times before she finally said yes. He was equally persistent in making it "Facebook official," sending several verbal and electronic requests. After letting the Facebook request sit for a year, Erin finally accepted. Her love for travel sealed the deal when she took Zak to Ireland for their first anniversary. For Zak, it was his first adult trip abroad and a crash course in navigating the challenges of international travel together. They passed with flying colors, and Ireland remains one of their favorite trips to this day. Their adventures didn’t stop there. The couple moved to South Florida, strengthening their bond while building a new life together in a fresh city. Along the way, they welcomed their sweet dog Loki, to the family. Eventually, they settled in North Carolina, a place they both fell in love with and where they bought their first home together. By their fifth anniversary, Erin planned an incredible trip to Portugal, hoping it might be the perfect engagement setting (wink wink). But Zak had his own timeline. Nearly two years later, on a trip to Costa Rica, after savoring the most incredible pineapple pie while watching the sunset on the beach, Zak dropped to one knee and asked Erin to be his forever. In the end, while Erin kept Zak waiting on a Facebook status, Zak kept her waiting on the ring—fair is fair, right?
