Many bakers / bakeries do not offer macarons because they are so finicky (they're not wrong, these babies can be a real pain!). I currently ONLY offer macarons and am a 1 woman team. I love the process and the reward (and joy) of seeing a bride's face seeing her colors matched in an elegant tower, or hearing of how the guests were so excited to try the unique favors. I focus on the fine details, from adding the couple's names to each shell, to matching a dusty blue groomsman's tie, because it's the little things in life that are the sweetest.
