Fantastic (but pricey) brunch that features bottomless mimosas and an amazing view of the city. Also a great spot for happy hour.

Multnomah Falls is the tallest waterfall in a state with a lot of them and is located only about a half hour outside the city right off I-84 (you can easily see the falls while driving by, but you should stop at the visitor's center and walk up to the falls).

If you aren't city people, we totally get it (neither are we, really). If you do venture out to the coast, on a weekend in August, we recommend skipping Cannon Beach (you will spend the entire time looking for a parking space or a spot at the brewery with hour plus waits) and driving south to the Lincoln City/Newport/Yachats area. It will still be crowded, but not as badly. There you'll find the Oregon Coast Aquarium, Rogue Brewing, Yaquina Head Lighthouse (best spot for seals), the historic bayfront (best place for shopping and sea lions- trust us), great hikes, and tons of excellent seafood restaurants.
Bend is about a 3 hour drive southeast of Portland, but if you are in love with Oregon's mountain views or want to check out the high desert, it's worth the trip. Sisters is a super cute town fashioned after the Old West that is a great place to stop for lunch, and Bend is also well known for its breweries and bevy of outdoor activities.
