Malecon Boardwalk Vallarta
I have personally enjoyed this boardwalk and amaze sunset off it. Had an awesome eve walking, eating local cuisines, shopping, people-watching etc. Definitely recommend!
Rhythms of the Night
Amaze sunset cruise with open bar inclusive of a dinner and show on an island - another adventure I thoroughly enjoyed!

Special callout to my Amala who I know will enjoy this but I'm sure there are others who are into gardens and plants.
Marietas Island & Hidden Beach
Recommended for some water activities and to check out the floral and fauna unique to Islas Marietas. That Hidden Beach seems to be the highlight!
Hill of the Cross Viewpoint
From All Trails - This was a great hike through the cobblestone streets of Puerto Vallarta and then a series of steps to the top of the hill. The view is incomparable and it is worth the effort. Consider going early in the morning to avoid the more intense heat of midday and afternoon. The route does not have any difficulty which allows you to enjoy the entire extension of the landscape. I hear tons of steps to get to the top so be ready to get some exercise in
