Erin worked at Caffe Medici, the coffeeshop across from UT Austin, throughout their junior and senior years. Some of Scott's friends would come to know her as "The Cute Barista (That Scott Liked)." Erin would greet him in turn with an enthusiastic "Hi Scott Walker!" After Scott got his 8oz black drip coffee (which he only sometimes had to pay for), Erin would chat with him, often recommending books that would go unread or discussing swimming. This went on until their final semester of school. One evening Erin abruptly stopped him on his way out and made up some excuse to give him her number. His phone was dead so she wrote it on a slip of paper... that he lost on the way home. Throughout that same final semester, Erin went to her 2pm-5pm Monday seminar which she shared with their mutual friend Conner. Conner semi-regularly invited friends from class to the Cactus Cafe for a quick after class pitcher. Scott was also invited some weeks. The Monday after Erin gave Scott her number (but never texted), she was nervous to have that pitcher. Somewhat doubtful of his interest, she enlisted Conner to ask him when she left the table. Upon coming back Conner gave her a nod and quickly made up an excuse to leave, nudging the other friend at the table to do the same. The night turned from an after class pitcher to wandering The Drag to Erin only slightly underhandedly tricking Scott into agreeing to get dinner to chatting in the courtyard of Easy Tiger until close. The next day they skipped their classes to go to brunch followed by Barton Springs and the rest was history.
Scott, Erin, and Brody, their dog, were in Edwards, Colorado at his grandfather's home for vacation and had spent several days hiking around the mountain. One of their favorite spots was known as The Big Park, at the top of the mountain. It's a 2 mile hike up from the house, which they'd made many times, but this particular day, they drove as were pressed for time; Erin had kept them at the Vail Market for longer than anticipated, and Scott had insisted he wanted a haircut before they go to The Big Park before dinner with his family and their friends. Dinner was planned to celebrate the birthday of a friend and set up by James, Scott's dad. Erin and Scott (and Brody) pulled up to the park, and Erin began to worry about time. Scott reassured her and they made their way up to the meadow with the most scenic views. There they sat, talking about their plans and futures and who they wanted to become. Until Erin realized the wind was making her cold and they were going to be late for dinner. Scott went to find where Brody had run off to and quickly returned with the dog. They got up to leave and as Erin was reaching for Brody to put his leash on, Brody took off after a dog that appeared out of nowhere! The dog's owner and another dog appeared as Scott was trying to wrangle Brody. Erin got the leash on in a rush seeing the collar in the tussle. After they walked some distance away, Scott said with a smile, "Erin, look at our dog." To which (a pressed for time and cold) Erin replied "Scott, I look at our dog all the time, we have to go." Scott only repeated, "Erin, look at our dog." She looked back at the two of them, curious if Brody had gotten hurt when romping with the other dogs. Finally she was a brilliant sparkle and glint of blue on the collar. Erin fell to her knees to get a better look and Scott got on his and asked "Will you be my partner? Will you marry me?"
