We’re getting married!

You might wonder why our URL is two Moore Costellos. There is no easter egg. We have both onemoorecostellos dotcom & twomoorecostellos dotcom. We ultimately went with two because..... We're both changing our names. Tommy Moore Costello & Sarah Moore Costello. So now that that's out of they way, lets get into our story. If you were to catch us on a random Tuesday, you’d quickly see that everything we do takes just a little bit more time than usual - we’re always cooking up on the low and slow. Our favorite dishes get started around noon and aren’t ready until after sunset. Tomatoes need at least 50 minutes of simmer before they even start resembling sauce. Garlic gets roasted. Onions get caramelized. Wine gets opened, first, for the saucepan, then, for the glass. In short, time is flavor. It’s a philosophy that somehow depicts everything about us. We were friends for 7 years. Then we were housemates—with a bunch of other friends in the neighborhood. Then we became housemates without those friends. We then took the natural next step in any friendship and spontaneously bought a boat together… it was a 60hp Boston Whaler that we called Blü. So, in the same way we cook, we started simmering—bit by bit, day by day, until one day we looked up and realized: dang, we’re at a soft boil. When our lives brought us out to the west coast, the adventures only got better: fishing the Yellowstone to the Blackfoot, hot springing Hot Creek, and falling asleep to the Mobular Ray migration off the coast of Baja. Our Simmer means we get to enjoy all of these amazing adventures with the side by side, attached to the hip, number 1, ride or die, partner in crime… …Kaurl HA We’re so excited to celebrate with you all on November 1st!
