San José del Cabo’s latest farm-to-table creation is Acre Baja, a design-forward development that offers an immersive experience, including yoga, hiking, and a dozen treehouses where guests can spend the night. Diners come to enjoy dishes like chicken liver mousse with chicken chicharrón and pickled turnip, fried tomatoes with sherry and honey syrup and crispy basil, and grilled fish pibil tacos with burnt salsa. Most of the ingredients are grown on the surrounding 25 acres of organic farmland or come from the area. Even the furniture, dishes, and lighting are sourced from local artisans.
This is casual dining at its best: a beachfront joint with tables right in the sand. The food is decent (think Mexican standards), but it's the view that will make you never want to leave. (Fun Fact: Scott won their "macho man" push-up contest during our trip last October!)
