You can either drive to the top or hike up from Markham (<3 hours round trip but a climb). Highest point in town with views of Mt hood, St Helens and Mt Adams (and sometimes Rainier on a super clear day)
Science museum and planetarium in SE Portland if you are trying to stay indoors
Giant book store in NW Portland! An absolute must even if just to roam
Hike up there from Forest Park and get beautiful views of the city on a clear day. You can also pay to go inside if you would like!

Walk along the Willamette River in downtown Portland. On Saturdays there is a market
There are so many breweries in Portland! The closest would be 10 Barrel, Breakside, Deschutes, Backwoods, Ecliptic, Migration etc. A lot can get pretty booked, if you can't make reservations put your name down and wander (maybe Powells?)
Willamette Valley is a great place for wine tasting, particularly Pinot Noir. You really can't go wrong. Ponzi is great and closer to town. Stoller is a great option and Durant (which also has Olive oil tasting) is nearby. Winderlea and Furioso are great smaller wineries. Anne Amie has a gorgeous view. Argyle is right off the highway with minimal views but has excellent wine.
So many lovely hikes nearby Mt Hood! Particular favorites are Trillium Lake (easy hike), Mirror Lake/Tom Dick and Harry Mountain (moderate). If you are looking for something less crowded, check out Laurence Lake (moderate).
Many lovely hikes along the Columbia Gorge and many waterfalls. Specifically Multnomah Falls (will need pass). Bridal Veil, Wahkeena, Horsetail, and Latourell. There are many hikes around the area but I think my favorites are Angels Rest and Wahkeena (anticipate 3 hour hike). If you are looking for something easy, check out Wahclella falls!
Hood River is a cute town on the Columbia Gorge with lots of restaurants and shops! There are some nice wineries nearby including Gorge White House and Mt View Orchards
