Carol and Phin met at Tristan's Restaurant in Harare. Phin was having dinner with his family and Carol came to the restaurant with a mutual friend. They didn't talk all night but according to Phin, Carol took his breath away as soon as she walked in. The dinner party moved to another restaurant, Maestro. Again, they didn't speak. Carol was being harrassed by other men who were there and she told the guys that her boyfriend was Phin to get rid of them, although he was talking to another woman at that moment! Phin eventually gathered his confidence and went to speak to Carol. He asked her if he could put his number in her phone (smooth move) for her to call him to 'grab some food' before she left to return to the UK. 2 weeks later, Carol eventually called Phin and they organised for an early dinner. Carol was 45 minutes late but Phin waited for her patiently! They were inseparable after that first meal or date! Carol says it was just grabbing food, Phin calls it a first date!
The wedding proposal was interesting to say the least! Carol made sure that Phin knew that she did not want anyone present when he proposed! He wanted to surprise her so he didn't make her dress up or set anything fancy. It was also his brother's 50th birthday party so everything had to be done on that day. Carol chose where she wanted to 'grab some food' before the party. Phin was being so sweet and attentive. Phin was freaking out because his phone battery was dying and he had no other way of documenting the proposal. He asked the waiter to record in the empty restaurant and according to Carol, it was all a blur and she can't remember anything Phin was saying as he went down on one knee to propose. She only recalls shaking and saying yes! Till this day, they don't have the recording of this proposal and a waiter somewhere has a recording of this special day on his phone.
