How We Met

Grand Forks, ND

We first met as classmates in our Physical Therapy program, but fate stepped in when we were randomly assigned to the same Beer Olympics team during our very first week of classes. We never expected that, in such a competitive doctorate program, Beer Olympics would be the chosen icebreaker—but it turned out to be unforgettable. That day, Hunter got his first glimpse of the real Nikki: competitive, mischievous, and not above bending the rules. (Yes, I shamelessly dumped my drinks into a nearby tree during the case races!) From there, we quickly became friends, and Hunter joined our study group—which, looking back, may have been his clever way of spending more time with me. Before long, those “study sessions” turned into actual dates. It didn’t take long for me to realize I couldn’t resist a handsome man who also happened to be a great chef. From study buddies to soulmates, the rest is history.

The Proposal

May 24th, 2025

It was a chilly day, but the first signs of spring were in the air when Hunter insisted on taking a drive into the Bighorn Mountains to go "fishing". Nikki, a little hesitant at first because of the brisk weather, agreed—and together we set off. What began as an ordinary outing turned into one of the best days of our lives. In the quiet beauty of the mountains, Hunter got down on one knee and proposed. We soaked up the moment—just the two of us—surrounded in Hunter’s favorite place. The surprises didn’t end there. When we returned to town, Hunter and our families had planned the most thoughtful engagement party. Walking into the Kennedy house that afternoon, we were overwhelmed with joy and love as we were greeted by so many of our closest family and friends. The rest of the day was spent celebrating, laughing, and cherishing the start of this exciting new chapter in our story.
