This Argentinian "sauce" works perfectly with your favorite proteins but its especially well -suited for steak! Ingredients: Parsley - 1 cup - firmly packed - stems removed Garlic - at least 3 large cloves - roughly chopped Oregano - 2 Tbsp fresh, or 2 tsp dried Red Pepper flakes - 1/4 tsp Salt and Pepper - to taste Red Wine Vinegar - 2 Tbsp Olive Oil - 1/3 cup Quick food-processing of all but the oil and vinegar. Add those after and let it all marinate until the meal is ready. Suggested sides: potatoes, salad, roasted asparagus
There couldn't be a more flexible dish. Call it what you will - but its a "kitchen sink" dish that helps use some fresh produce before it's too late. Ingredients: Spaghetti, or pasta of you choice Onion, or shallot - 1 cup, diced Garlic - 3 cloves, minced Oregano - a few shakes Red Pepper Flakes - a pinch White wine - 1 cup Broth, or starch water - 1/2 cup Veggies - suggested: mushrooms, asparagus, broccoli, etc. Cherry tomatoes - 1 cup, sliced in halves Parmesan cheese, we go big with this... Sautee onions, garlic and spices until translucent. Add the wine and cook it off, add the broth/water, reduce. Add fresh veggies until softened, but not floppy. Once sauce is the volume you want, add the halved tomatoes just to warm them. When pasta is done to your liking, fork into a shallow bowl, ladle some sauce and top with parmesan.
This dessert is made with fresh berries of your choice and a sweet biscuit-like topping! THE FILLING: Berries - 24 oz, we love this with blackberries! Sugar - 1 cup Cinnamon - 1/4 tsp, ground Corn starch - 3 Tbsp Water - 3/4 cup Cook and stir berries, cinnamon and sugar in a saucepan until the mixture comes to a boil. Combine water and cornstarch before adding to the berry mixture. Bring to a boil and cook 2 minutes, or until thick. Pour into a grease 8 in square baking dish. THE TOPPING: Flour- 1 ½ cups Sugar - 1 Tbsp Baking powder - 1 ½ tsp Salt - ½ tsp Butter - ½ cup, cold Buttermilk - ½ cup, cold In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter using a pastry blender or two forks until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture. Bake, uncovered, at 350F for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream!
