Golf, tortillas, and a very specific appreciation for diet Big K Cola. That's a knock off Diet Coke for those who don't know. He’s also a proud and very doting Nino (godfather), a title he takes very seriously. Katie is a city born, small town raised gal who thrives on good food, great wine, and a solid true crime documentary. As the oldest of three girls, Katie’s been coordinating schedules, organizing chaos, and making sure everything runs on time her whole life—becoming a meeting planner was basically inevitable. She’s deeply family-oriented, fiercely loyal, and equally happy with a plate of pasta or tacos (balance, right?). She’s the kind of aunt who shows up big—loving hard on her niece and nephew and making memories any chance she gets. We met on Hinge, where Manny did something that immediately set him apart—he made an actual reservation, showed up early and stood up to open the door when Katie walked in. (Yes, chivalry is alive and well.) Katie was impressed… and the rest is history. The proposal? Perfectly us. Manny had planned something for the following weekend when we were going to be in Cottonwood at Katie's parent’s ranch. But life kept getting in the way—plans changed, schedules shifted, and finally he decided he just couldn’t wait anymore. So, in true Manny fashion, he made it happen right then and there… in Katie’s sister’s driveway with her (mostly) unsuspecting family gathered inside to watch football. Katie, naturally, did not believe him at first. There's Ring camera footage of Manny on one knee for a full minute to prove it. But once it clicked, it was perfect—because they could immediately run inside and celebrate with family.
