La Loma Mexican Kitchen in Castle Rock holds a special place in Trey and Amanda's hearts, being their go-to spot for birthdays, anniversaries, and other celebrations. Trey highly recommends the Chimichangas—crispy flour tortillas filled with shredded chicken or beef brisket, served with guacamole, hatch green chile, rice, and refried beans. Amanda's favorite is the Anniversary Plate, a La Loma classic featuring a stuffed sopapilla, chile relleno, and chicken flauta, all topped with guacamole, sour cream, and hatch green chile.
