Good question. Like all states and territories, the situation seems to be changing every month. But right now (November 13 2021) there are cases of community transmission in the NT and there are border rules in place when visiting the NT from interstate. For the latest rules and regulations, including information on vaccination and entry requirements please visit https://coronavirus.nt.gov.au/ for all the latest.
The NT has 2 seasons - Wet ( Nov-Apr) and Dry (May-Oct). The wedding will take place during the Wet season (BUT it's on the cusp, so we could get lucky if the dry sets in a little early). The Dry: peak tourist season. The weather is cooler and dryer (as the name suggests) and there are usually a lot of events and activities during this time. The NT really comes alive. Had the wedding been able to go ahead in 2021 you could have experienced the magic of the dry (sorry!). The Wet: hotter, humid and it rains a lot. It's a quieter time in the Territory, some parks, outdoor attractions and activities get closed due to flooding and there is generally a storm at least once a day with an off chance of a cyclone. But despite all of this, the wet season has a charm too. I personally enjoy watching the afternoon thunderstorms roll in and the lightening displays. Visually, the NT is more green than normal and I've heard the fishing during this time can be good too
