This is Emily's FAVORITE coffee and quick breakfast spot. Everything is delicious. Emily's favorite drink is the Vanilla Oat-milk latte 1/2 pump. We both love the avocado toast and all of their pastries!
This is our favorite vegetarian/vegan restaurant in the area. It is all farm to table. Everything on their menu is amazing! We recommend this for any meal! As a bonus, it is right off of Pearl Street in downtown Boulder.
There is great pizza and beer here. We really love their hummus plate too!

They have the best ice cream here. We splurge here too often! And they offer vegan ice cream, Emily's favorite.
This chapel holds a special place in our hearts because it is where Peter proposed. The drive is absolutely breathtaking. From the road you will see Long's Peak and Twin Sisters. The chapel is really small and quaint. Pope St. John Paul II visited this chapel and blessed it during his visit to Denver for World Youth day in 1993.
This is a great option for mass on Sunday or daily mass. The church is absolutely breathtaking. We highly recommend that you take time to visit this magnificent church.
Beautiful church in downtown Denver. We highly recommend visiting this iconic spot in Denver.
This is a must for any visitor to CO. If all the roads are open, the full drive is about 6 hours, full of breathtaking views. Even if not all the roads are open, it is still a must. You will have a fabulous time driving through the park and will probably catch a sighting of some moose. As a bonus, you will be able to drive through the gorgeous city of Estes Park.
This is a great spot to watch the sunset over the Front Range. Peter and I often day our weekly rosary here.
Chautauqua park is a great place to see the Flatirons close up! It is also to entrance to a ton of great hikes. Plus, it is right in the heart of Boulder.
This is a very sort 100 yard walk to a breathtaking view of the Front Range. It is an iconic spot to sit and watch the sunsets. we will sometimes order takeout and watch the sunset from the here.
This a nice little hike in Boulder. It's a great spot to see the natural red rock formations. We highly recommend picnicking here. We did pictures here with Chelsea in April and it was amazing.
This is a super fun and challenging hike in Boulder. The views at the top of the prairie and the front range are incredible. This is where Peter and I shared our first kiss.
This is a great and moderately challenge hike in Boulder. Definitely bring micro-spikes for your shoes.
This is a Colorado favorite. The views are stunning and the hike is not too long. We definitely recommend checking this out.
This is where Peter and I took our first photo. Long's Peak is a 14er in the Front Range. If you decide to do the whole hike, be prepared for a huge challenge.
Stop here to see the historic Stanley hotel where The Shinning was filmed before heading into the Rocky Mountain National Park. The drive is beautiful and the views are breathtaking.
