Chances are, if you know Emily very well, you've heard her at some point go on and on and on about Woods Coffee....there might be a slight obsession there. But don't just take Emily's word for it, try it out yourself! There's lots of locations around the Whatcom County area--click the link to see them all. If you're feeling even more adventurous, or seriously in need of more caffeine, go check out the roastery location in Bellingham and try a bunch of different coffee/espresso based drinks while watching the roasting process happen!
With lots of home-style food (and amazing french fries) this is another favorite place of Emily's. She and her friends used to order to-go meals from here for off-campus lunch every Friday of Senior year. Sometimes those 'meals' consisted simply of an order of french fries (with 2 cups of ranch). To this day this is a must-have whenever Emily comes home (seriously, the fries are so good!). This is also a GREAT option for a hearty breakfast or brunch.
This cute little cafe is located in downtown Lynden and is one of Emily's favorite places to eat when she's home. The food is great and the atmosphere is super quaint. And when you're finished eating, you can walk next door to Village Books, or 2 doors down and taste some oil and vinegar. (Or across the street to the Dutch Bakery to grab a cookie, donut, or almond patty!)
This taproom is located in the heart of Downtown Lynden and has been a favorite spot of Emily's to get together with friends when they're all home for the holidays. A portion of the proceeds from every pint bought goes to build wells in towns overseas that don't have access to fresh drinking water--reason enough to at least check it out, right?
When the Visser girls were growing up this was a favorite on Saturday afternoons in the summer after all the chores were done. Since childhood, this dairy has grown from one single location to multiple across Whatcom County. It is still a favorite during summer visits home--just a short bike ride from where the Vissers now live. With LOTS of different flavors of hard-scoop ice cream, multiple flavors of soft-serve, and even a menu of milkshakes and sundaes, this is a must-stop place in Lynden for dessert.
Whether you're looking for a quick stop for lunch or a few sweets to satisfy your sweet tooth, the Dutch Bakery in downtown Lynden is a great stop! Right across the street from the Inn at Lynden, Avenue Bread, and Overflow Taps, you can't go wrong with stopping here!
If you're looking to get outside and experience some nature while you're visiting, this hike is well worth the view that's waiting at the top! The Vissers took Josh on this hike on one of his first visits to Lynden and, while the view was somewhat clouded over by the time we got to the top, it was some great bonding time together, and still an amazing view! While this hike isn't particularly difficult, it is quite a long walk (and the inclines at certain points can get relatively steep) so make sure you wear proper shoes and don't stress yourself too much!
This cute little area of Bellingham was one of Emily's favorite places to go with friends back during high school. Park at Boulevard Park (it's free to park there!) and walk the board walk/short trail into downtown Fairhaven to grab some ice cream or another sweet treat at one of the cute little shops.
A cute little sea-side town, Birch Bay has always been a favorite place of the Vissers as the girls were growing up. Whether going to the State Park to watch the sunset, or going to the bay for low-tide and a walk to the C-shop, there are so many fond memories that have been made at Birch Bay.
The mountain that "looms" over Lynden! Very pretty drive up to the ski area and some short hiking trails available up at the top. Stop along the way at Nooksack Falls.
