Dave and Yolanda Del Dotto restored the winery in the late ‘90s to age our red wines in the caves. These cave-aged wines proved to be more voluptuous and opulent than those aged in modern facilities, and as such, our family continues to age wines in these historic caves to this day. Bar Tasting - $45 pp The Napa Bar Tasting includes a sampling of six wines at our tasting bar. Included in the tasting is our house made focaccia, Del Dotto Olive Oil, breadsticks and dark chocolate. Approx. 45 minutes. Cave Experience & Barrel Tasting - $80 pp Our signature experience includes wines thieved right out of the barrel. Taste the difference between wines produced in oak barrels from the great forests of the world. Each barrel tasting concludes with our house made sourdough pizza featuring cultured yeast from our own grapevines. Approximately 90 minutes.
