You could go up the Kuantan 188 Tower and see Kuantan city from higher ground + where the river meets sea! There's also a river cruise here if you feel like being in the river. There's an art street in the alley behind the old shoplots if you want to take photos with the murals. There are also plenty of cafes around the area - muka, notis pizza, tjantek, wildflour kopitiam, 1940, the famous kulacakes!

Do a day trip to Sungai Lembing town and visit a temple in a cave! Or stay the night there and do the sunrise hike. If the weather permits, you can also hike the air terjun pelangi.
If you're not tired of the beach already, you can also make the trip up to Cherating Beach, where if the monsoon season is still around, you get to catch the surf season and learn how to surf by taking one of the surf classes available there.
