If you're coming all the way to New Jersey, you should consider taking at least one day to visit New York City. NYC is absolutely beautiful during this time of year.
The area surrounding the wedding venue is relatively rural and has lots of hiking trails with spans of the Appalachian trail crossing through. Please note, you optimally only want to stay at the Hilton Garden Inn the night of the 6th - you will be a long drive from everything if you stay there before or after. A couple of the bride's favorite trails for people wanting to get outside in the cold:
