Haleakala is a volcano above the clouds and makes for a beautiful sunrise or sunset. You can do bike tours, or simply set a reservation to drive and visit the outlook point.

Hole in the wall local Italian spot downtown Lahaina. Really good food and more reasonable prices
Snorkel at Kapalua Bay
One of the best spots to snorkel on Maui.
Road to Hana
Road to Hana is a day-trip that will take you along many windy roads, beautiful waterfalls, black sand beaches, blowholes, and many fun pit stops along the way to Hana. This is a full day trip, but I recommend it. Make sure to download the Road to Hana app which will help navigate you along the way and tell you the key places to stop.
Paia Fishmarket
Great spot in Lahaina for fresh fish. You order at the front then sit down, so it's more casual. The portions are big, prices are decent, and food is delicious.
