As a Portland local, I (Annie) would like to tell you there are MANY places to get a good doughnut. This is just one that we've been to. Joe is a doughnut enthusiast, approves this recommendation.
I (Joe) think the Star Wars X-wing simulation game is a rare gem. You can grab a drink, and play tons of games.

The Rose Festival is (one of) Portland's big celebrations each year. There are rides, games, and on the night of our wedding, a giant parade! That being said- give yourself a little extra time to get into town (or across town) that evening to make it to our wedding in time to parttaayy!

Mcmenamins is a restaurant (and concert hall in this case) with a lot of history. A PNW chain that is sure to please pub food.
If you're staying a few extra days, head to the coast for a whole different side of Oregon. The closest beach to Portland is only about an hour away! Annie's favorite coastal towns are Lincoln City, Cannon Beach, and if you really want to go for it, Gold Beach.
Great bakery in an interesting part of town. Go check out the shops with a fancy pastry in hand.
