The first date

Panera Bread and beer!

It should not come as a surprise to anyone but Amy was running late on their first date. Amy is often running on "Mag-Time" and this particular evening she had a burnt-out headlight that caused her to be just a few minutes late. The first date was a quick dinner at Panera followed by a stop at the Mankato Brewery for a Mad Butcher IPA. Eric was so nervous he couldn't finish his food at Panera but the beer at Mankato Brewery calmed his first date nerves. Amy had Eric's heart on the drive back to his house when she talked very briefly about her dating philosophy and said; "If you don't hunt or drink, this probably isn't going to work". Eric wasn't able to stop thinking about Amy when she left that evening to go put her daughter, Kiana to bed.

On June 22, 2019 Eric proposed on an empty lot where they had been planning to build a new home together. Eric had asked for approval from Don months before the proposal and had a beautiful diamond ring ready for the right moment. After a stroll through the farmers market and a few other errands on a sunny Saturday afternoon, he took Amy to check out the lot. They had done this many times before so it was not too unusual. They let Roscoe out of the truck to run around as they walked around the lot. As they stood there holding each other admiring the view from where their future home would be built, Eric got down on one knee and proposed.
