We are very excited to try a bunch of traditional Irish dishes: Irish stew, colcannon, soda bread, boxty, porter cake, etc. Your gift includes a dinner out where we can enjoy sampling a variety of these dishes. Choosing which restaurant to do this at is a tall order, but know that your gift will fill us up with delicious food and lots of love.

Fish & Chips and a Couple of Pints
Yes, fish & chips is a British thing. However, the Irish can cook up a mean plate of the fried goodness as well. Also, this will give us a chance to try this dish out across the pond, whose residents claim their's is far superior to the American version. Your gift includes a fish & chips dinner, and of course a couple of pints. It is hotly debated over the best place to get fish & chips in Ireland, so it may take us time to choose. But rest assured I'm sure we will find a place that does not disappoint.

Lunch at Hatch & Sons in Dublin
The name of this restaurant is inspired by an old dairy and cattle farm that's located nearby. With milk and beef being two key Irish ingredients, they thought the name rather fitting for the restaurant's mission: a focus on the kitchen - heart of the house, source of sustenance, warmth and hospitality - no fuss, just good, honest Irish food. Although they focus on all things Irish, they incorporate a modern approach to Irish ingredients. Your gift will include a lunch at this casual but ingredient-conscious place. Its a chance for us to try Irish food beyond the classics like Irish stew.

Romantic Dinner for Two at Ard Bia's
We will be in Galway at the tail end of our trip. At this point we will have visited a fair number of pubs and had a lot of traditional Irish dishes. Although we're sure we will thoroughly enjoy it, this will be our opportunity to try an upscale restaurant that steps out of that Irish comfort zone to present unique dishes. Ard Bia specialized in Irish-Mediterranean fusion food, which we are still struggling to wrap our minds around the concept. Your gift includes a romantic two course meal and wine pairing at this amazing place. Its a must try in Galway!

Sweet and Savory Pies at The Pie Maker in Galway
One thing that's not really done here in America are meat pies. We have chicken pot pies but that doesn't count. The Pie Maker is just the place for trying savory (and also sweet) pies, with delicious sounding selections, such as "chorizo, mozzerella, pesto, and gravy pie" and "Irish sausage and veal gravy pie". This small but amazing little pie shop is located right the middle of the latin quarter in downtown Galway, which is full of bustling shops and restaurants. Your gift includes a visit to The Pie Maker, where we will get to try out some of their awesome pie selections.

Exploring the Ring of Beara
The Ring of Kerry is an incredibly popular drive along the Wild Atlantic Way. However, many suggest driving along the Ring of Beara instead. Just south of the Ring of Kerry, is a slightly smaller but arguably more beautiful and definitely less crowded Ring of Beara. Have you heard of craic (pronounced 'crack')? Its an Irish word for fun and enjoyment, particularly when mixed with alcohol and/or music. Fun doesn't really cut it though. It can be boiled down to general banter, good times had by all. There are a handful of things we wish to experience in Ireland, and the majority can be summed up by the word: music, general merriment, and pints of beer. It can also be accomplished by doing a pub crawl in pretty much any city, town, or village in Ireland. Famous Seafood Platter Dinner at Moran's Oyster Cottage
Purchased
Moran's is a family business dating back more than 250 years. Daniel Moran came to the village in the 1760's and served up liquor (and locally sourced oysters) on his property, which were enjoyed by local farmers. During the Oyster Festival of 1966, the first barrel of draught Guinness was brought to Moran's. The Guinness and seafood were so popular that a legitimate pub was born from that day. Moran's is now famous for their seafood fare, particularly their Galway flat oysters. The restaurant is located right next to the Clarenbridge oyster bed, situated at the mouths of the two rivers. Oyster beds require a combination of fresh & sea water, so this area created the perfect natural bed for oysters to grow (they are not cultivated in any way). Your gift includes dinner at Moran's and a chance to try their most famous dish - their seafood platter, which highlights these amazing oysters.

If you've seen Star Wars The Last Jedi then you've definitely seen this island! Featured heavily as Luke Skywalker's Jedi temple of solitude, Skellig Michael is a UNESCO World Heritage site featuring sheer cliffs, ancient monastic sites, and puffins! It was home to Gaelic Christian monks from the 6th-8th century who led simple lives on the island, living in beehive shaped stone huts. As we drive up the west coast of Ireland, we plan to stay at more scenic places. It also allows us to take in the beautiful Irish countryside and coastlines. We plan to spend two nights on the Dingle Peninsula, which offers one of the most gorgeous stretches of coastline and contains the famous "slea head drive". After spending time soaking up the jaw dropping views along this drive, we need a place to settle in for the night. The Pax House is a B&B that offers that Irish hospitality, but with a 5 star feel. Little touches like Bailey's and chocolates in your room every night is why this place is on another level. But the number one feature of this place is the breathtaking views of Dingle Bay from the dining room, patio, and rooms (seen in this picture). Your gift includes includes accommodations at the B&B, a place that highlight's the natural beauty of the area, allowing us to soak up as much of this landscape as possible.

Overnight Stay on the Aran Islands (Inis Mór)
Purchased
Off the west coast of Ireland is a set of three Islands called the Aran Islands. The largest of the three is Inis Mór. Small enough to explore in a day, this island is chocked full of over 50 different monuments of Celtic mythological heritage and stone forts, such as Dún Aonghasa. The 1200 residents speak primarily Irish, and the pubs and B&Bs are known for their traditional Irish music and traditions. Your gift include an overnight's stay on the island! Inis Mór is quite the popular destination, but many of the tourists only take day trips. Watching the drove of tourists take the last ferry off the island as we get to stay and drink some pints with the locals listening as they play traditional Irish music (and hearing them speak Irish!) is an experience we will always remember. Our stay will be at the adorable Mary Joe's B&B. Mary Joe has since passed on the B&B duties to her daughter, Allison, who is known to provide nothing but the best Irish hospitality.

Hop on Hop Off Bus Tour in Dublin
Purchased
Our favorite way of exploring cities is on foot. We like to get lost among the streets and find hidden places. But Ireland is beautifully green and lush for a reason - the rain. No strangers to rain being from Oregon and all, but realistically we will need a way to get around in inclement weather (which is likely all the time in Ireland). Additionally, in Dublin many of the things we want to see span a fairly large area. Your gift of tickets for the Hop on Hop Off Bus Tour will allow us to jump from place to place with ease when we need it, so we can see more places. And of course the extra bonus of the charming tour guide.
