We'll be going on a multi-country tour. We plan on stopping in Japan, Vietnam, and South Korea.

We'll be making stops in Tokyo, Kyoto, Hoi An, Hanoi, Rapa and Seoul--starting our trip staying at the Aman in Tokyo. Everything’s perfect about the Aman, is the short version. The rooms are a modern, urban interpretation of a classic ryokan, as is the stunning, massive spa, incidentally, with its baths clearly inspired by the traditional spring-fed onsen. The views, naturally, are phenomenal, and the tower’s location alongside the Imperial Gardens certainly doesn’t hurt in that department.

We'll stay at the Rakkojae Hanok in Seoul. Meaning “a place where one can enjoy the traditions of times past and rest one’s soul,” Rakkojae Seoul is a Korean traditional culture space with a 130 year old history. Here, the harmony created between traditional Korean architecture and nature has created on opportunity for the true beauty of Hanok to shine.

Mingles is a modern, fine dining restaurant in the buzzy Cheongdam-dong district which has been awarded one Michelin star. They serve modern Korean dishes which are true to traditional Korean tastes in a modern way. The chef, Mingoo Kang, is a growing celebrity in Korean cuisine.

Tokyo is one of the most exciting cities on Earth, and has a legendary nightlife. You can begin your evening at a tachinomi stand bar, drink and dine at a cozy izakaya, enjoy seasonal cocktails at an only-in-Tokyo mixology counter, venture into a hole-in-the-wall rock or hip hop club, sing all-night karaoke à la Bill Murray in Lost in Translation, and dance until morning to the beats of DJs from around the world. In short, Tokyo is home to one of the most diverse and fascinating nightlife scenes on the planet! Help us enjoy it!

Tomomi is a Japanese tour guide who will show you the real Japanese way of doing just about any day to day activity... supermarket shopping, making tea, life changing magic of tidying up... whatever! Her sushi making class is particularly spectacular. After a quick trip to the fish market, go to Tomomi's house to make homemade sushi.

Ninh Binh is like Halong Bay on Land. Limestone Karsts rise up out of the jungle and floating on the Tam Coc River in a traditional Vietnamese boat surrounded by floating rice fields and pre-historic cave systems is a great way to see it.

Kate is a bit of a Pho-fanatic. And Hanoi has gained a reputation as the pho capital of Vietnam. Every restaurant here boasts a secret recipe – and you'll find one of the best at Pho Thin on Lo Duc in the historic French Quarter. This unassuming pho house, with wooden benches and laminated tables, does things a little differently – such as stir-frying the beef in garlic before adding it to the soup. Local foodies insist it gives the pho an unusual smokiness, not found in other restaurants.

Saebyukjib is a no-frills 24 hour Korean barbecue joint famous for it's late night/early morning crowd. After a day of exploring Seoul and with enough Soju in the system, barbecue at 1 A.M. sounds like the BEST idea!

For authentic, home-cooked Vietnamese food, this rooftop oasis is the go-to place. Secret Garden really is a secret garden–beautifully decorated with central Vietnamese-style lanterns and a lot of greenery.

Sumo wrestling is way more involved than you might think. The wrestlers practice daily for several hours. Visitors can arrange to watch a practice in some of the top training facilities.

Sunset over Halong Bay off the northeast coast of Vietnam creates a scene that defines the area. The silhouetted limestone columns, which rear out of the sea from the slenderest of bases, are amazing.... even more amazing to see them up close by kayak!

Built in 798AD, Kiyomizu-dera is known for bestowing good fortune. The terrace offers amazing views over the city of Kyoto.

With two Michelin stars, Narisawa is a foodie dream destination. It's menu changes daily, but it always serves it's signature “Bread of the Forest”. The bread is baked table side with black sugar and kumquat, then served with a delicious butter wrapped in moss.

The Sofitel Pan Pacific offers amazing views of the city from its mountainside perch.

Vietnam is famous for its amazing street food. Chef Daniel Hoyer and his wife, Lai, take visitors on private tours of the best local food carts. We're most looking forward to the deep fried kabobs on French bread.

This 27 mile biking trip (it's mostly downhill) takes us from Sapa to Lao Cai. We'll stop in three villages along the way to meet the Red Dao, Flower H’mong and Dzay villagers.

Hoi An is a UNESCO heritage site and an exceptionally well-preserved example of a South-East Asian trading port dating from the 15th to the 19th century. Its buildings and its street plan reflect the influences, both indigenous and foreign, that have combined to produce this unique heritage site. We are looking forward to walking around the city and doing a walking tour through the ruins of the ancient Champa Kingdom in Hoi An.

The focus of Jogye-sa is the giant wooden hall Daeungjeon, Seoul's largest Buddhist worship hall.

If you take a look at our registry, you'll see we thought a 27 mile bike tour was a great idea. We anticipate needing a trip to the spa before we're able to move again!

Samhae-soju-ga is a small shop making Soju in the traditional way. Master brewer Kim Taek-sang offers a short lesson on creating Soju and a tasting from three casks.
