This will enable Callhan and I to have 4G LTE everywhere on our entire adventure, without having to rely on hotel wifi.

Sunday, June 3: We check in at our first hotel - Le Doge. A boutique hotel fashioned from an art deco townhouse in the city center of Casablanca.

The embodiment of Marrakech nightlife, Bo-Zin does champagne- and DJ-fueled nightlife as well as anyone, without the cheese factor you’ll find at other massive indoor-outdoor venues that have popped up outside the medina. You’re here as much for the scene—Palm Springs meets the easyJet set—as the food, with a menu that tilts Thai, with noodles and dim sum among the choices. In cooler months, the garden’s the place to be, but in the heat of summer, opt for a table in the mist-cooled pergola.

This will be our first flight as a married couple, as we set off to start our Honeymoon in Morocco.

The next hotel on our journey, is the Lina Ryad is Chefchaouen. We picked this place because they offer to run out for sfinge (local donuts) at any moment, and there are cats everywhere! Callie likes cats.

They say they are really that good!

Our next hotel is situated in wonderful Fes, Morocco. Palatial traditional riad on the outside, colourfully contemporary urban chic on the inside, the hotel Palais Amani captures the many facets of the ancient city of Fez. Here, the air is perfumed with citrus, the rooftop terrace has dramatic views and the hammam offers peaceful seclusion from the pace of the medina.

This will be our second restaurant, and is located in our hotel. Dining under the stars in this Andalusian-style oasis is a delight, surrounding by citrus trees and next to a twinkling fountain. The chefs take traditional recipes and give them a contemporary presentation, creating a weekly changing three-course dinner using seasonal produce from the market. Perhaps a fava bean soup or a beef-and-artichoke tagine will be on the menu. They also have an à la carte menu, for lunch as well as dinner, with Mediterranean favorites, such as duck breast and fries. On the roof terrace you’ll find a tapas menu and a good mojito, or you can dine inside the Art Deco–influenced dining room.

Nur is Chef Najat Kaanache's tribute to the proud cultural and agricultural diversity of Morocco. She affectionately refers to her country as "the mouth of Europe", forged through its unique confluence of colonial cultures. In the words of famed Chef Ferran Adria, "Najat represents the soul of Morocco through the language of the kitchen." Our dining room has a chic contemporary feel, but the design elements actually date back to Byzantine times, simultaneously offering a sanctuary and time capsule. Chance brought Nur to Fez, but, over time, we hope to shine light on Moroccan gastronomy. Today, we feel comfortable ensconced in the shade of a maze of pathways where we blur the boundaries between art and gastronomy, between the traditional and modern culinary worlds.

Discover Morocco’s Meknes wine region and its full-bodied wines on this private 6-hour tour from Fez. Travel into this scenic region between the Rif and Middle Atlas Mountains, and admire the green vineyards. Then, visit one or two wineries to tour the cellars and sample the wines. After a calming 8.5 hour drive crossing the Middle Atlas Mountains, and stop for mint tea, we'll arrive at our 4th "Hotel." We'll enjoy a sunset camel trek, and a traditional Berber Dinner, and an overnight stay in the Merzouga Luxury Desert Camp.

Our safari guide will collect us from our camp in a 4-wheel drive vehicle and drive us to the meeting point for your buggy activity. In the desert, we will follow our guide along the natural trail of the dunes. We plan to do this in the Merzouga Desert Camp.

If there were a Moroccan Michelin Guide, chef Omar El Ouahssoussi would easily snag a star for his five-course Euro-Moroccan tasting menu of dishes like breaded quail’s eggs with vegetarian kefta and puréed beets.

In a former warehouse of the sultan's Jewish traders, this is one of three Madada brand businesses in Essaouira. The restaurant and bar offers fresh seafood prepared imaginatively and according to the seasons. Try the monkfish tagine with caramelized apples or the lobster pastilla. You can also pop in to enjoy tapas and a cocktail. There is live music on the weekends.

If anyone knows James, knows that he would love a fishing charter. Especially one that forces Callhan to go.

Essaouira is known for some of the best windsurfing off of the coast of Africa, and June is a prime month to take advantageous of a bucket list activity. Yes... Callie knows how to windsurf.

One of Callhan's favorite things, is to collect tea. Traditionally we collect teas from every visit, so this will add to the collection for our guests!

Fes is also famous for its leather products and most of it comes from the leather bazaar (souq). The souq is home to three ancient leather tanneries, the largest and oldest being the Chouara Tannery, which is almost a thousand years old.At the Chouara Tannery, hides are first soaked in a mixture of cow urine, quicklime, water, and salt.

We've been approved for drone usage in Morocco and hope to be able to capture memories from all angles, on all excursions. Callie will not be permitted to fly this, so your gift will have a better chance to make it back to the states.

This gift is more specifically tailored to Callhan, and her 9.75 fingers. She'll expand her skills as we learn to cook at a locals home.

We plan to take a camel ride for 30 minutes to watch the sunset, and 1 hour or more to feel the true silence of desert and experience the true Moroccan Sahara Desert way of life. We plan to do this in the Merzouga Desert Camp.

Le Trou au Mur brings a breath of fresh air to the Marrakech restaurant scene. Chic, laid back, fun, relaxed, intimate and comfortable but, above all, totally serious about food. Set in a small riad in the oldest part of the medina, the décor is a unique blend of superb local craftsmanship with the best of modern European style. Enjoy an early supper on the roof, or dine at any time in the gorgeous air-conditioned restaurant (with a log fire in the cooler months). With its own traditional clay mechoui oven on view, melt-in-the mouth mechuoi roasts will be a feature, but no less so than a variety of carefully researched old family recipes rarely seen outside private homes.

Moroccan food-TV star Moha Fedal has a superb restaurant that occupies a plush 19th-century riad. His tasting menu runs to refined dishes like monkfish b’steeya and foie gras couscous.
