The Rehearsal dinner is a private event. Invitations will be mailed separately. For dinner, you have a choice between Beef Short Rib, Grilled Salmon, or Tortellini. Any of these options can be made gluten-free. Please notify Beth (817) 729-2888 of the need for a gluten-free option. The Braised Beef Short Rib with Texas cheddar creamy polenta and seasonal vegetable succotash. The Grilled Salmon with toasted cumin rice, green beans, baby carrots, and caper beurre blanc sauce. The Tortellini (vegetarian option) with roasted spring onions, oven-roasted tomatoes, pecorino romano, sea salt, and a basil pepper cream sauce.

For dinner, you have a choice between two different chicken plates. The Chicken Raphael is a chicken breast lightly breaded, pan-fried, and then baked. Topped with a white wine cream sauce with artichoke hearts and mushrooms. The Tuscan Balsamic Chicken (gluten-free option) is a baked chicken breast topped with tomato, onion, fresh garlic, and basil finished with a balsamic glaze. The sides for both of the chicken entrees will be au gratin potatoes and green beans. Pasta Primavera (vegetarian option) is sauteed fresh seasonal vegetables & herbs with pasta tossed in marinara. sides garden salad & bread.
