Tortillas served with pork, egg, & onions; cheeses; or other toppings. Churros, from food carts! Sprinkled with sugar and sometimes served with dulce de leche or cajeta. Michelada or Chelada cocktail, Mexican beer, lime juice, hot sauce, & Worcestershire in a salt-rimmed glass. Or not spicy chelada, a milder version containing beer and lime juice. Ceviche, marinated in lime juice w/ tomatoes, peppers, onions, and cilantro. Served as a tostada, atop a deep-fried or toasted tortilla. Chicharrón, dish of pork crackling or fried pig skin. Nibble on it or enjoy it in chicharrón tacos (served in a tortilla with avocado & cheese) or chicharrón in salsa verde (dressed in a green sauce made from tomatillos). Elote and Esquites dishes are 2 of Mexico’s most popular corn-based treats: Esquite, cup of kernels served with lime juice, powdered chilli, mayonnaise, shredded cheese & eaten w/ a spoon. Elote is grilled corn on the cob sprinkled with flavorings like chili powder and crumbled cheese.
