From parasailing, fishing, ATV tours, snorkeling, etc, there are so many great things to do in Puerto Vallarta, and the surrounding areas. You'll likely find many activities offered right off the beaches of most resorts.
We also recommend visiting the main towns nearby for an authentic experience.
