We met on the one day it snowed in Raleigh, NC at our alma mater North Carolina State University on January 23rd, 2016. Lexi and her friends dressed up for the snow, Lexi normally, and her two friends in a Maui Jim outfit and a taco suit. Nick, drawn in by these outrageous costumes, decided to join in the fun. The group went sledding on lunch trays down the hills of the Court of North Carolina, before proceeding back to the dorms as a group, to have some, totally non-alcoholic, hot chocolates. That evening, as friends returned to their dorms, we continued to talk into the early hours of the morning. Learning about each other, discussing food preferences, and making a list of movies to watch, over a melted set of Cookout Fancyshakes™. From then onward, we were inseparable. Weekends were spent watching cooking shows & trying to re-create the recipes at home and exploring what Raleigh had to offer. Life found us meandering around campus with close friends enjoying college life. After graduating from NC State, Lexi for Business: IT and Nick for Environmental Engineering, Lexi started work at Cisco Systems as an Operations Business Analyst, unintentionally buying in to all spellings of “Sischo”. Nick, with his entrepreneurial mind, worked in the startup world for a few years, where he was able to be an engipreneur, before joining Lexi at Cisco to be a Sales Engineer. When March 2020 hit the world, Lexi, Nick, and friends were visiting Disney World, thinking that if Covid were serious, Disney would react accordingly. Exactly 1 day after this statement, Disney shut down for the Covid-19 Pandemic. We raced back home to Raleigh, NC, to ride out the next few years. We had plans to move in together, but Covid-19 sped up the timeline. While Nick was finishing his last courses at NC State, Lexi was taking video calls from the kitchen table. With this accelerated pandemic move-in, we had to find a new rhythm while we dealt with our new reality. Not seeing our friends in person, learning what it meant to exist with each other, and how to live in unusual times. On the bright side, we were able to continue our love of cooking at a more regular cadence and binge Star Wars and Lord of the Rings frequently. As the restrictions were being relaxed, our home became a focal point of gatherings for friends & family. We hosted beer pong tournaments, potlucks, and Harry Potter Marathons. Life was good, and we had built a little slice of life in our college town with some amazing people. In April 2022, Nick learned that he needed to move to San Francisco, CA to be closer to his new job in the city. After much debate & internal job searching, Lexi landed a job in the city. Thus, our West Coast adventure began, and together we moved to SF on December 30th, 2022, the rainiest day in SF’s history. Starting our 4th year in the city, it’s obvious our lives have changed. Our days are now spent walking to work, experimenting with the amazing cuisines in the different neighborhoods, and hiking some of the most beautiful mountains the west coast has to offer. West coast life is not that dissimilar to our east coast life, and we still love all our friends and families, whichever coast they call home. In our 9.5 amazing years as partners, we’ve had many adventures, experienced the world hand in hand, and built an incredible foundation for us to become husband and wife. We cannot wait to see where it will go in the years to come and cannot wait to bring everyone along with us for the ride!
