We first met at Binghamton University in the fall of 2020, at one of the Chabad rabbi’s houses for Shabbat lunch, but it took another year and a half for us to start dating. Although we had many mutual friends and spent a lot of time in close proximity, we needed time to realize just how perfect we were for each other. From our very first date, which started at the dining hall and continued at a basketball game, we were inseparable. While that marked the beginning of our relationship, our first official date was during Purim in 2022, when we went out for brunch and then visited Summit One Vanderbilt to take in the breathtaking views over NYC. We then had a year and a half together at Binghamton before Adina graduated and began her Master’s in Social Work program, while Simon finished his senior year. Our long-distance journey started as a three-hour drive between us and later became an hour-long train ride from East Brunswick to New York City—navigating all those NJ Transit delays along the way. So far, we've saved around 1,000 (and counting) Instagram recipes to try together, become an aunt and uncle, celebrated birthdays, anniversaries, and weddings, learned karate with Sensei Dale, attended concerts and various sporting events, traveled to Dubai and Canada, and spent many Shabbats in East Brunswick and the Upper West Side. It has been four incredible years together, and we can’t wait for forever!
