If you are an out of town guest and are looking to explore, early morning is a good time to go hiking. 
 Bring water, and don't go alone.
For night life, any of the downtown areas are pretty lively.  If you are young, you might want to check out Mill Ave in Tempe.  Downtown Phoenix has something for everyone.  Downtown Mesa, Chandler, and Gilbert are a bit more chill, but still have plenty to eat, drink, and do as you walk around the areas.
