If you are interested in Snorkeling, I recommend renting beach gear including snorkel gear from Snorkel Bob's there are plenty of locations on multiple islands. Not only can you rent Snorkel Gear and go off on your own to one of MANY snorkel spots, you can rent other gear or sign up for one of their Tours/Activities. There are two Snorkel Bob locations near Ka'anapali, Snorkel Bob's- Lahaina & Snorkel Bob's Honokwai. Ask them for a beach map or some rad local snorkel spots.
Whaler's Village is an outdoor shopping mall with places to eat and shop. There are local restaurants and shops, along with brand name as well. It is within walking distance from Sheraton Maui, and located along the main 'hotel drag' of Ka'anapali. I recommend stopping by Island Vintage Coffee for a nice Kona brew, or eating outside in the sand near the beach at Hula Grill.
Cruise down to the town of Lahaina, and check out the ENORMOUS Banyan Tree and experience some Hawaiian History and culture. There are many shops and restaurants along Front Street- the main drag of Lahaina, along with tons of history and beautiful views. Enormous is no understatement here: Spanning 1.94 acres—over the length of a city block—and rising more than 60 feet in the air, Lahaina’s famed banyan tree is a quarter of a mile in circumference and possesses 16 trunks, making it the largest banyan tree not only in Hawaii but also in the United States (and one of the most massive in the world).

Our wedding ceremony and dinner will be overlooking this amazing snorkel spot. We recommend heading back this way to enjoy some great snorkeling in calmer bay waters. It can be crowded at times, but this spot is a must!
If you are interested in a hike or a swim among waterfalls, check out this site. There are plenty of options to take a guided tour or you can go it alone and spend more time where you would like to. If you decide to go it along or do a tour, I recommend brining plenty of water and sunscreen, bring some snacks and definitely waterproof everything (daybag, shoes, clothing, etc.)
As a foodie and someone who loves to try new things in new places, Hawaii is a melting pot of many cultures and cuisines. A well known Hawaiian dish is loco moco- this is a dish to check off of your list, especially if you may have overindulged or as Stuart Forrest says may have been 'overserved' the night before.
Haleakalā, or the East Maui Volcano, is a massive shield volcano that forms more than 75% of the Hawaiian Island of Maui.
Along with a mile long list of things to do, is a mile long list of places/things to eat. I left this website of best restaurants in Maui, but please know you really can't go wrong. The pineapple and Maui onion chips from an ABC store are delicious as is Mama's Fish House.
Just visit while you are in Lahaina, you won't regret it!
