Where we will be at it's more like Fall. So definitely bring layers. The best example I have is Cali weather. Early morning cool, late afternoon it warms up, and at night it drops. I recommend looking up the weather before packing.

As of now you do need a negative test AND vaccination card to enter Ecuador. It's pretty much the same as here with showing proof of vax card and id when entering places.
