Most places are open very late. Awesome food, karaoke bars, and video game bars.

Japanese crane games and other arcade style games.
Player 1 Video Game Bar - Las Vegas
Old school arcade games and craft beer.
Red Rock Canyon National Conservation Area
A great escape from the city. You can go for a hike or drive the scenic loop and stop at all of the gorgeous scenic stops.
Mount Charleston
A little out of the way, but a gorgeous stop if you want to get out of the city. Mount Charleston is about 45 minutes from the Las Vegas strip and has beautiful hikes in Alpine mountains.

Fremont Street Experience
Fremont street at night is a fun place to see lots of lights and very interesting people. It is a must see for the Las Vegas experience. Just outside the main strip, though, are some great restaurants. If you go during the day you can get an amazing brunch at one of our favorite restaurants, PublicUs, and visit container park or the Neon Graveyard.
