Hike along the McCloud River as it cascades over three waterfalls (ample opportunities for swimming). It's about 25 min. from Mount Shasta by car.
Take Everette Memorial Highway up the mountain and past Bunny Flat to the Old Ski Bowl for expansive views of Mt. Eddie and the Trinity Alps (no hiking necessary). There are several excellent hikes along this road. The trail from Bunny Flat leads to the Sierra Club Cabin where mountaineers frequently stop for water before making their summit bid. Panther Meadows is another nice place to stop just before just before you reach the Old Ski Bowl. Near the end of the road, you will find South Gate Meadow Trailhead. The hike to the meadow is a bit of a trek, but will reward anyone with the energy to hike there with dramatic views of the Konwakiton Glacier above the high alpine meadow.

A short hike close to town with views of the valley and Mount Shasta (try the detour to Rocky Point on the way up).
