We first met as servers at Cracker Barrel in 2020...I know what you're thinking, how romantic. We quickly became best friends and always looked forward to working shifts together. Soon we started hanging out outside of work, talking for hours over bad coffee and fluffy pancakes at IHOP after shifts. We both slowly realized this was more than a friendship and started dating. Shortly after, we were known as the "super servers" at the Barrel. We spent many moments playing chess, trying new coffee shops, and traveling across the US. Libby survived EMT and Paramedic school with the best supporter and cheerleader, Eric, who is now also pursuing a career in EMS and has recently completed EMT school. We talked often of the future and how we both want to be in each other's lives forever. On our four year anniversary, April 18th 2025, Eric proposed. It was perfect, sweet and intimate, and photographed by Libby's youngest sister. A year has quickly passed and we are so excited for our loved ones to witness and celebrate our beautiful covenant on April 24, 2026.
