You just have to. There are leather shops around the piazza where tourists and locals alike buy jackets, belts and purses. The top floor of the "Move On" record store/pub off the piazza has great views if you want to take a seat for a while too.
You'll need a lot of time here! Great rainy-day afternoon activity. The original All'Antico Vinaio location is nearby on Via dei Neri, and is a great spot to hit if you'd like a famous Florentine sandwich.
The status of David by Michelangelo is located here and is spectacular. You really don't know how detailed - and big - it is until you go. Highly recommend and get tickets in advance if you can!
