Mitch & Libby met at a mutual friends birthday party in good 'ole Greeley, CO. Libby had put together a pasta buffet for all 25 people who came to the house prior to spending a night out in cowtown. Mitch was too cool (or too healthy) to eat the wonderful food Libby made, so she gave him grief (well deserved, in her opinion). He instantly thought she was rude and brushed her to the side. As the night went on, they began to talk more and Libby even caught him looking at her a couple times. Once the group hit the bars, Mitch offered to buy her a drink and she declined because she wanted to take it slow on the drinks that night. Five minutes later, she bought herself a margarita with her friend.... Ouch. No worries, he forgave her and she let him buy her a drink at the next bar. That night Mitch asked to take Libby out in Denver the following weekend. From there, you could say the rest is history. <3
The Sunday evening after thanksgiving, Libby had planned to go to Postino (aka her FAVORITE wine bar in Denver) with Mitch's sister Rylee and their close girlfriend Madi. The entire night Libby was oblivious to so many things happening around her. First, Mitch helped her pick out her outfit. So rare, but very sweet! She also noticed he had been drinking a little more than usual prior to her leaving the apartment. He said it was because he had a big sports bet going (of course, if you know him why wouldn't you believe that!?). When Libby met the girls at Postino, they were seated outside on the patio not far from the back staircase. After a couple hours, some bottles of wine, and some BOMB bruscetta, Libby was eager to bar hop (on a Sunday evening, nonetheless). The girls kept pushing this off and she could not figure out why. Madi asked Libby to go to the bathroom so she went with her. When she came back, there was a pink envelope sitting on the table. Libby asked Rylee "What is this?". Rylee responded with "I don't know, the waitress left it and I didn't want to open it". Truthfully, Libby's immediate thought was that someone left a note saying they paid for their bill....Inside the envelope was a note that said "turn around". Confused, she began looking around the restaurant. When she turned to the back staircase, she saw Mitch. He had the biggest smile on his face and a small white box in his hand. He got down on one knee. After the numerous rehearsals of what he was going to say in the shower, the moment was finally here. With tears in his eyes, he asked her to marry him. Soon, we will have the NEW MR. & MRS. CARTER! We're so excited to celebrate this next chapter of our lives with you. See you in Cabo!
