In the summer of 2021 Erin was managing Dario's Brasserie in Omaha when she got an email from a cook looking to work there. Luckily, the restaurant was in need of a line cook, so Erin took a meeting with Cole. He got a thumbs up and his name was passed on to the boss, who brought him on board. We became fast friends, and before long everyone but us seemed to know we were dating. It wasn't until Cole took a new job that we realized this was more than friendship. We made it official and never looked back! Cole proposed on Thanksgiving night, at the house, while we put up the Christmas tree. Despite Erin's insistence that she just wanted something low-key, it was indeed just like something from a movie. We had worked together to design the ring a few months prior, so it was perfect.
