Guillermo rode seven miles on his bike in the blazing Florida heat in October 2018 to show up for his first date with Lauren at her favorite vegan café—wearing hiking pants, Teva sandals, and toting a 20+ year-old North Face backpack. Lauren pulled up in her cherry red Subaru hatchback, immediately spotted Guillermo inside as the crunchiest-looking person there, and—before even introducing herself—started naming all the plants in the shop to species by memory. It was love at first sight. After eight hours of nonstop chatter over iced oat milk matchas, Lauren threw Guille’s bike into the back of her car, and they set off for a dinner of cactus quesadillas, bonding over stories of strange pets (Guillermo’s cockatiel, Paco, who used to sit on his shoulder for pizza takeout runs; Lauren’s hedgehog, Pepper, who left tiny spike landmines all over her parents' house), a love of the great outdoors, and a shared desire to squeeze every last drop out of life. From that day on, they both knew they were the perfect match (and their friends and family happily confirmed it). For the past six years, they’ve been inseparable—building an adventure-filled life together, moving to Michigan with their goldendoodle, Myles, and tabby cat, Sammy, who graciously allow them to live in their home. When they’re not snuggled up with their furry overlords, you can find them backpacking, cross-country skiing, ice climbing, or testing the limits of their health insurance with some other new, questionable hobby. Now, they're tying the knot—because after surviving four Michigan winters together, they figure they can handle anything.
